  1. A very late in the evening mother’s day post

May 13, 2012 by Tarrant Figlio

Late in the evening of Mother’s Day–I wish all the mother’s out there a happy mother’s day. I want to particularly say happy mother’s day to…
The other mothers who’ve helped me raise my incredible children (our kids have a wealth of mothers!)
The little kid’s grandmother and great-grandmother on their father’s side
The mother who trusted me with her three children and let me make them my own
Her mother-That’s one really wonderful daughter you raised.
That oldest child about to be a mother and make me a grandmother!
Especially my mom–she taught me to cook, to love, traditions and way too much more for me to say.

My mother’s day: I’ve gotten three lovely gifts from my little children. (a first! All three! Gifts they put their own work into and heart into)
Mama took us to dinner at the Armenian place.
    We watched the Survivor finale.
I spent way too many minutes at the Minute Clinic–but I now have medicine that seems to be helping. (cross your fingers!) Nasty sinus infection that I just can’t ignore anymore and hope it goes away on its own. I always try that first. Sometimes way longer than I should…like this time.

I hope your day was wonderful…mother or not.

  2. Baked Lemon Pudding

May 11, 2012 by Tarrant Figlio

I really love baked lemon pudding. It is somehow elegant and comfort food all at the same time. Baked lemon pudding makes a great Mother’s Day dessert, so give it a try. (*hint*)

    Baked Lemon Pudding
    2 eggs, separated
    1 tsp salt
    1/2 cup granulated sugar
    1 T grated lemon rind
    5 T lemon juice
    2 T butter
    1/4 cup granulated sugar
    3 T flour
    1 cup milk

Preheat oven to 350. Grease 1-qt casserole. Beat egg whites with salt until peaks form when beater is raised. Slowly add 1/2 cup sugar; beat until stiff. Beat yolks with lemon rind and juice, melted butter. Stir in 1/4 cup sugar mixed with flour; add milk. Fold into beaten egg whites. Pour into casserole. Set in pan containing 1/2 inch hot water. Bake 55-65 min or until golden. Serve slightly warm.

  3. Frankfurter Supper Quickie

May 10, 2012 by Tarrant Figlio

Something intrigues me about casseroles called “quickie” in old cookbooks. It’s right there with “Surprise” in the “words not used often enough in today’s recipes” list. Quickie Surprise Wiggle would be best I suppose.

    Anyhow–here is a quickie recipe.

    Frankfurter Supper Quickie
    3 medium tomatoes, sliced 1 ” thick
    flour
6 frankfurters, cut into 1/2″ pieces
    1 medium green pepper, sliced
1 cup grated Cheddar cheese (processed is suggested but…even my retro soul cringes)
    1 large onion, thinly sliced
    1/2 teasp salt
    1 clove garlic, minced

Preheat oven to 350. Sprinkle tomato slices lightly with flour. In 1 1/2 qt casserole, arrange tomato slices in alternate layers with frankfurters, green pepper, cheese and onion. Sprinkle each layer with the salt and garlic. Bake, covered, 30-35 min until cheese is melted and bubbly.

Bob’s Red Mill invited me to create a recipe using their Whole Wheat Pearl Couscous. I did. You’ll like it. Go take a look: Cold Sesame Pearl Couscous. If you like Peanut Sesame Noodles–you will love this!
