Chili Lime Cheese Potato Frittata

So much to tell you but there is a fierce storm going on. Instead I will just share a quick dinner that I put together.

Chili Lime Frittata


  • Nonstick spray
  • 1 bag Simply Potatoes shredded potatoes (or about 3 1/2 cups shredded potatoes)
  • 4 oz Chili Lime Cheese-grated
  • 2 green onions, chopped
  • 6 eggs, beaten


  1. Preheat oven to 350 degrees
  2. Spray pie plate with nonstick spray
  3. Combine all ingredients.
  4. Pour into pie plate.
  5. Bake at 350 for 45 min or until done.


  1. Yum.

    I almost heated it up at 4:30am. Decided I’d wait a little while so as not to wake the dog with the yummy food smells.
