Latkes are a favorite in this house and I make them from time to time, not often because of the fat content. (though you can take this recipe and “oven fry” with nonstick spray.)
I am lazy when it comes to mixing them up, I start with the preshredded potatoes in the dairy section. (like Simply Potatoes)
1 bag preshredded potatoes
1 small shredded/finely chopped onion
1/3 cup flour
2 eggs or 1/2 cup egg substitute
Oil for frying
Mix ingredients. Heat oil. (Don’t walk away to do something else real quick. This can result in a fire and your son making fun of you. Don’t ask how I know this.)
Form into patties if you’d like–I just drop a large table serving spoon into the hot oil and flatten a bit with the back of the spoon. Fry until brown, flipping halfway through.
Serve with applesauce and sour cream.
