My 14-year-old got excited about this recipe when she saw it. What isn’t to love about corn fritters? Corn, deep-frying, a doughnut disguised as a vegetable.
Another recipe from “My Favorite Maryland Recipes”
2 cups corn, fresh or canned (of course, true Silver Queen fresh off the vine works best)
1 teaspoon salt
1/8 teaspoon pepper
1 egg, well beaten
1 teaspoon melted butter
1/2 cup milk
2 cups flour
1 teaspoon baking powder for frying
Chop corn very fine, add salt, pepper, egg, butter, milk, flour and baking powder. Mix well. Fry in hot deep fat, 1 tablespoon batter for each fritter. Serve with strips of fried bacon or with brandy sauce. (I just dusted mine with powdered sugar.)

I haven’t had corn fritters in years. I love corn fritters and I love silver queen corn. Why didn’t I think of combining these sooner????? Great recipe thanks for sharing!
My Mom made corn fritters by mixing up pancake batter, the kind from a box, and then adding a can of drained corn kernels. She fried them up and we ate them with pancake syrup and it was like a special treat. I didn’t realize until I became a Mom that this was actually a budget recipe!
First time here and I won’t comment on corn fritters because they don’t sound like my sort of thing (though my husband loooooves this kind of stuff – so I’ll send him your blog link!)
However, since I stopped by the blog I wanted to say HI, it was nice to meet you, and also I really like your blog design. A lot. Just a tad short of “I want to steal it.” (which I won’t, promise).
