Looking for a quick and easy side dish for Easter? Don’t know what to do with those tiny new potatoes at the supermarket or if you are lucky enough in your area-the farmers market or CSA?
Parsleyed Potatoes are the answer.
Grab a bag of new potatoes or about three pounds. Wash them/scrub them well. Boil them up in just enough water to cover them. Add a teaspoon of salt or so if you are the sort.
Boil them until tender.
Then…the magic. Drain them. Throw a stick of butter or margarine in the pot. Let it melt. Add the potatoes back in-chop them a bit if you’d like. Stir that up with enough parsley to make them pretty.
Simple, fast and addictive.
