Minus the mushrooms and the Ham, but plus 1 can cream of chicken soup - this IS my "Funeral" potatoes, which I've been making for 20+ years. My friends and family just expect them now. In fact I made them for Easter to go with the Ham a few years ago, and my nephew who totally loves them asked "who died"?

My favorite part of this entire post is when you listed everyone's reactions to the casserole. That always fascinates me - how I can make a dish and there are 8 different reactions.

This is one of the state dishes of Utah (the other one being jello, of course.) But here, no mushrooms in any of the versions I've had. For real funerals, this is always served at the lunch after, just the potatoes with sliced ham on the side.
