		<description>I agree with Erica...being Polish and raised in Baltimore, I ate latkes several times a week growing up. My Mother used grated raw potatos (including the skin), a little flour, a little shredded onion, salt &amp; pepper, maybe an optional egg to hold everything together, and that&#039;s all.  The secret to frying them to crisp perfection is to use lard, yes, lard, or any leftover grease, NOT oil (we didn&#039;t have oil in the &#039;olden days when I was little&#039; as my kids used to say.  Yum.</description>
