Roast Beef Salad

We had a roast last night. It was delicious but we have leftovers. I doubt anyone will want the leftovers…unless I do something magic with them. So, that I will do. I will put together this Roast Beef Salad for dinner.

Roast Beef Salad

1 cup diced, cooked beef
2 hard-cooked eggs, sliced
2 tomatoes, quartered
1 small head lettuce
French dressing or mayonnaise

Toss first three ingredients together. Serve on lettuce with French dressing or mayonnaise. Serves 6. Use diced cooked ham, tongue, or corned beef instead of the beef if desired.

  1. This turned out really well. I ended up adding a bit of cilantro because we had it in the fridge and a bit of shredded cheese (because I had some leftover from making the macaroni salad and the pimento cheese)

    I also mixed the ingredients except for the lettuce with a tad of mayo before placing on the bed of lettuce.
