Macaroni Salad

June 8, 2009 by Tarrant Figlio

Macaroni salad is definitely on the menu for the week. It is quick, inexpensive and popular. I will be trying this recipe this week since it uses up bits and pieces of food in the fridge:

Macaroni Salad

2 cups cooked macaroni
1 cup diced celery
1/4 cup diced cucumber
1/4 cup diced sweet pickle
1/4 cup diced American cheese
1/2 pimento, cut fine
Mayonnaise to moisten
5 green peppers

Chill ingredients and combine. Chill for several hours. Serve in pepper cups. Serves 5.

This is something I’ve never learned to like – pasta salad of any kind. I think it has more to do with the texture than the taste.
