I hesitate to share an asparagus recipe. My kids won’t let me live down asparagus jell-o, but this one is really good and perfect for Easter.
Wash and trim asparagus. Tie into bunches and stand upright in kettle of boiling water. Steam 10 minutes with cover on. (oh forget the tying into bunches and standing up right..just steam your asparagus. I do it in the microwave.) Chill in the fridge
Make a French dressing (think retro French-not orange French dressing)
4 T. pure olive oil
1 T cider vinegar
1/2 t salt
1/2 t black pepper
