Chess Pie

My son has requested cherry pie for Easter dinner. This of course launched me into singing “Can she bake a cherry pie Billy Boy, Billy Boy?”. Yeah, I got the exasperated teenager look for that one

I wonder if I can pretend that I didn’t understand his handwriting and make a chess pie instead. I like them better and they are much easier on the budget. I like this one.

Chess Pie

5 egg yolks
1 1/2 cups sugar
1 tablespoon flour
1 tablespoon corn meal
2 T oleomargarine
1/4 cup grated cheese
1 c milk
2 T cream (or just use 1 1/4 cup whole milk)

Grate cheese, combine with milk and heat but do not boil. Mix eggs, sugar, cornmeal and flour; add to milk. Mix well. Add melted margarine and cream. Bake at 375 until set.

  3. No you can’t swap a chess pie for a cherry pie, shudder. I will just buy a store bought cherry pie.

  4. It is sort of like a custard pie. I use cheddar but any will do.
