My family would consider this an April Fool’s Joke of a dinner…but I grew up eating more than a little dried beef, though not in chowder. Creamed Chipped Beef on Toast or as it is widely known as…S.O.S.
It is a frugal way to serve meat at dinner and versatile. Check to see if fluid milk is cheaper in your area than dried…I know it is in my area. It can be substituted easily for the dried in this recipe. Serve with a salad.
Dried Beef Chowder
1/3 cup chopped onion
2 tablespoons margarine
3 medium potatoes, peeled and diced
1 3-oz package sliced, dried beeef, snipped (1 cup)
1 16-oz can cream-style corn
1 cup reconstituted nonfat dry milk
1/2 tsp salt
Cook onion in margarine till tender but not brown. Add potatoes, beef, and 1 cup water; cover and simmer till potatoes are tender, about 15 min. Stir in corn and milk. Season with salt and dash pepper; return to boiling. Makes 4-5 servings.
