I have a confession to make. I hate making cookies. I hate the 10 minutes, pull the tray out, make another tray hoopla. I also am not a big cookie fan. Of course, that doesn’t matter to the rest of my family, so cookies I bake. My kids can sometimes be conned into mostly bar cookies though.
That is where this recipe comes in. Quick, easy, bar cookies.
Beat until foamy 2 eggs
Beat in 1/2 cup sugar
Sift together and stir in 1/2 cup sifted flour, 1/2 teaspoon baking powder, 1/2 teaspoon salt. Mix in 1 cup cut up walnuts, 2 cups finely cut up dates.
Spread in a well greased 8″ square pan. Bake until top has dull crust. Cut into squares while warm. Cool. Remove from pan. If desired, dip in confectioners sugar.
350 F. 25-30 minutes


I hate making cookies, too. Ditto for cupcakes.
