Spinach Casserole
I love spinach. I love spinach casserole. Unfortunately, dietary restrictions keep me from my favorite vegetable. My great-grandmother thought this recipe was good-the hard-boiled eggs in casseroles never did anything for me though.
2 pkgs chopped spinach (10 oz pkgs) cooked and drained
4 hard-boiled eggs, chopped
1 can cream of chicken soup (or cream of asparagus/cream of celery)
Grated sharp cheese
Mix all together. Top with breadcrumbs and cheese. Bake at 375 until firm.



But… if it doesn’t have raw eggs… what is going to hold the thing together? The cheese?
I really like it when you tell us the source of the recipe.

This spinach casserole was always one of my favorites…but then again I love just about anything with spinach in it.

I am with you on the hard cooked eggs. When I see a hot food dish with them in it I turn the page. Is that a southern thing? I know one of my southern cookbooks has a lot of recipes with them.

It could be a southern thing. Most of the recipes I have seen with hot hard boiled eggs do come from the south.
Vered-Nothing holds it together. Now, I do have that spinach ring recipe that holds together all pretty.
If there is no source, it is either because it is something my mother dictated to me or taught me as a kid. Or something grabbed from my Great Grandmother’s box.

Or something grabbed from my Great Grandmother’s box.” - but that’s a source too, and what I meant - it would be great to know which recipe came from your mom, tour grandma etc. - to me, it enhances the experience of reading your blog.
