Apricot Nectar Salad
I love apricot nectar. We also have a bunch of marshmallows I am trying to use right now. This retro Jell-o mold seems perfect.
Apricot Nectar
2 pkg orange gelatin
1 1/2 cups hot water
2 1/2 cups apricot nectar
1 cup marshmallows
Mandarin oranges
Dissolve gelatin in hot water. Add apricot nectar, marshmallows and mandarin oranges; let set.
Topping
1/2 cup sugar
salt
2 tbsp flour
1 egg
1 cup apricot nectar
1 cup whipping cream
Combine sugar, salt, flour, egg and nectar. Cook until thickened. Fold in whipped cream; spread on set gelatin. Yield:10-12 servings

What is Apricot Nectar? I don’t CARE if you laugh at me! You shoulda heard my mother when I asked what ‘Oleo’ was. It was all over my great Aunt’s recipe books. I thought she was going to shoot Apple Dumpling from her nose.

Apricot nectar is basically a strong apricot juice. You can find it in the canned juice area of your grocery store.

YUM! I made my first semi-successful mold ever last night. Vanilla gelatin that is made with millk. So yummy. I posted a photo on my blog, not that it’s anything earth shattering.

My vanilla gelatin is imported from Mexico. The brand name is D’Gari. They carry chocolate, pistachio, walnut, strawberry and vanilla that are made with milk. They make gelatin that uses water too, although the flavors are often different than what you’d expect.
At 68 cents – 79 cents for a 7 oz package it’s a good price. Even better is that the gallons of milk came with a 25 cent off coupon. It’s almost the only brand of gelatin I buy anymore. Except when I made the Pumpkin Jello that was on here in November. they didn’t carry lemon flavor.

Interesting-I recently made some honeydew gelatin from…China maybe? that was made with milk.
