This one from my mother who called on Friday night to ask if I still did that “meatloaf online thing” on Mondays every week. She raved about her new recipe for meatloaf…she got it from someone at church.
Pizza Meatloaf
2 lbs ground beef
1 cup bread crumbs
2 eggs
1 small jar spaghetti/pizza sauce
Sliced or Shredded Mozzarella
Mix ground beef, eggs, 1/2 of the spaghetti sauce. Form into loaf. Bake for 30 minutes at 350. Pour remaining sauce on top, bake 30 minutes. Add mozzarella on top and bake for another 10 minutes or until cheese is melted and loaf is fully cooked.

I dunno…it seems a little…bland. I like my meatloaf to have a whole laundry list of yumminess. I think this would be the one thing I take a pass on…

LOL Kiesha. I am tempted to say throw some mushrooms, green pepper, and black olives in it, plus a teaspoon or two of Italian seasoning.

I food processed my “diced tomatoes with garlic and mushroom” to use for the spaghetti sauce. I did add sage and oregano too. No mozzarella in the house, and while we enjoy adding cheddar it’s just too expensive right now. So I put a bit of bacon on top to add more flavor.
