Cheesy Meat Loaf Monday

Can’t go wrong with a cheesy retro meatloaf or can you? The American cheese may be thrifty–but not one of my favorite foods to cook with, so substitute a sharp cheddar instead. From Good Food on a Budget, 1971.

Cheesy Meat Loaf

1/2 cup chopped onion
1/4 cup chopped green pepper
1 8-oz can tomato sauce
2 beaten eggs
4 ounces process American Cheese, diced (1 cup)
1 cup soft bread crumbs
1 teaspoon salt
dash pepper
1/4 teaspoon dried thyme leaves, crushed
1 1/2 lbs ground beef
1/2 pound ground pork

Cook vegetables in boiling water until tender; drain. Stir in remaining ingredients except meat. Add meat; mix well. Shape into loaf in baking dish. Bake at 350 for 1 1/2 hours. Makes 8 to 10 servings
