Simple Retro Meatloaf

This is the simple classic meatloaf. Serve with mashed potatoes or the next day cold as a sandwich. Yum. You can skip the green pepper if you don’t have an extra 1/2 of a pepper wilting in your fridge. And…you definitely can mix the sauce mixture by hand if you don’t want to get out the food processor or blender.

Simple Retro Meatloaf

3/4 cup bread crumbs
1-1/2 lb. lean ground beef
1 large egg, lightly beaten
1/2 cup ketchup
1/2 cup chopped onion
1/2 cup chopped green pepper
1 tsp. Italian Seasoning
1 tsp. salt
1/4 tsp. pepper

Preparation -
In a large bowl, mix the breadcrumbs into the ground beef; set aside. Place all the remaining ingredients in a food processor or blender and process until well blended. Add the sauce mixture to the ground beef mixture and mix well. Place in a loaf shaped pan. Bake in a preheated oven at 350ยบ for 1-1/2 hours. Drain the fat from the pan. Let stand for about 10 minutes before slicing and serving.
