Sweet Cranberry Salad

Filed under: Recipes, Salads, retro food — Retro Food

The title isn’t lying when it says this is a sweet cranberry salad. I use half the sugar and still get good results. So, if you need a jello salad for your Thanksgiving table, consider this one. From a Home Ec Teachers Group Happy Holidays Cookbook

Sweet Cranberry Salad

12 ounces cranberries
2 cups sugar
1 15-0unce can crushed pineapple
1 6-0z package black raspberry gelatin
2 cups boiling water
1 to 2 cups chopped pecans

Chopped cranberries in food processor. Combine with sugar in bowl. Let stand for several minutes. Drain pineapple, reserving juice. Add enough water to measure 2 cups. Dissolve gelatin in boiling water in large bowl. Add pineapple juice. Chill until partially set. Add cranberries, pineapple and pecans; mix well. Chill until firm.
