I have decided that Wednesdays should be devoted to Jell-o which of course is the classic retro food. Today, Pink Salad. It may cause a bit of a texture problem for those of you who hate cream cheese though.
1 pkg raspberry jello
1 can crushed pineapple (small)
1 c. cream style cottage cheese
1 c. whipping cream
1/2 c chopped nuts
Heat juice drained from pineapple and pour over jello. Cool and stir in pineapple and cottage cheese. Whip cream and add nuts. Fold whipped cream mixture into pineapple mixture. Pour into molds and chil.
