Potato Salad

This is what I have made this morning (well other than caramel rolls)…a potato salad to go with dinner that doesn’t have mayo.

1 5 lb. bag new potatoes
1 small onion
1/2 cup parsley flakes or chopped fresh parsley
1/2 cup olive oil
1/2 cup red wine vinegar
1 teaspoon tarragon
1/2 teaspoon dill
salt and pepper

Boil potatoes in skins (because I am lazy-if you want to peel them do) until tender. Chop onion finely.  Quarter potatoes. Mix onion and parsley in with them. Mix remaining ingredients together in measuring cup or bowl. Pour over potatoes. Stir together. Refrigerate.

  2. I am definitely going to try this recipe at some point. You have me interested in potato salads that have no mayo. I have all the ingredients on hand for this except the dill.

  3. You could definitely skip the dill. Basically you want to make a vinagrette.

    The cinnamon rolls were out of a kids cookbook, so rather simple. You take a 1/2 cup of brown sugar, mix in 1/3 cup whipping cream in the bottom of a round pan. Then you mix together 2 tablespoons sugar and 1 tsp sugar. Open a can of breadsticks/crescent rolls. Spread out flat. Spread cinnamon sugar on top. Roll up and cut cinnamon rolls. Place in pan, bake at 350 for 25 min or until done.
