Nutty Rice

This is another one from Nini’s recipe cards. It is super yummy, homey and easy. It also is way better than those pre-made rice in a pouch or box things. It is a thrifty way to use up leftover chicken and stretch it for the whole family as well.

Nutty Rice

Recipe given to my great-grandmother by Brenda Naomi

3 T butter or margarine
1 C. raw rice
1/4 t. red pepper
1 c cooked chicken, diced
1 t. salt
1/3 c. cashew nuts
2 c. cooked chicken broth
2 T. chopped green onions
2 T. chopped parsley
1/2 t. curry

Melt butter in heavy saucepan. Add rice and stir until light brown. Add salt, pepper, and nuts. Add other ingredients to the brown rice. Pour in chicken and broth which has been heated to boiling. Stir lightly. Lower heat. Cook for 20 minutes or until rice is tender. Serve while hot.
