Avocado Gourmet

I have an avocado fixation this week. I want to eat lots and lots of avocados. Luckily they are in season and avocados are probably the cheapest thing in the produce section right now…at least in FL. Super buttery, ripe, NUTRITIOUS…they lower that bad cholesterol you know, in addition to containing vitamin C, vitamin E and lots of potassium (which is probably why I am craving them, my potassium has been a bit low.)

Friday night: Avocado sandwich. Saturday Night: Guacamole.

In honor of avocados…how about Avocado Gourmet – retro style:

Avocado Gourmet

No idea what limestone lettuce is…maybe iceberg? Anyone know? Also, don’t know what recipe the right side is…no other bits are included. Perhaps a fruit salad?

Avocado Gourmet

Fill avocado half with ¾ cup cooked cut shrimp. Spread mayonnaise over top; press 2 tsps. each finely chopped hard-cooked egg yolk and parsley around mayonnaise edge. Top with a shrimp. Place on a plate lined with limestone lettuce, ½ cup shredded lettuce. Garnish with ripe olives, tomato wedges. Serves 1.

    I love avocadoes, too! They’re running $1 each here, which is cheap for Long Island. I’m making guacamole today!
    My favorite topping for a salad: strawberries, avocado and candied pecans. Mmmmmmm…

  3. Thanks Mom2fur. I usually look these things up but didn’t this time. The salad sounds good!

    Avocado sandwich, well, you can either just slice them and put them with cheese (provolone works well), tomato, onion, cucumber on your favorite roll or bread. Some folks add sprouts and lettuce or mash the avocado up with some lemon and spices first. Or something I like to do is get some nice sourdough or rye, butter it, put some provolone or mild cheddar on both sides of bread, avocado on top, assemble sandwich and fry in a skillet until crunch on the outside and melty and yummy inside. There is a restaurant here that makes one with Tomato, onions, and Swiss cheese with an avocado and cashew spread that I really like.
