Vegetable Slaw

More slaw, and this one is quite different. It includes peanut butter and mustard. Really tasty! You could call it Asian-inspired (in which case you could definitely go really retro and put some crisp chow mein noodles on top) rather than retro funky if you are sensitive about such things.

You could even throw in some salted roasted peanuts for a nice visual and to warn away those peanut allergic who no doubt will be beguiled by the pretty appearance of this dish. (Ok, you should be super careful if you are serving this to groups in any case and maybe add a peanut warning on an index card…peanut allergies are nothing to cross your fingers with)

½  cup mayonnaise
1 tablespoon prepared mustard
2 teaspoons peanut butter
3 cups finely shredded cabbage
1 cup shredded carrots
½  cup thin sliced celery
2 tablespoons minced onion
Crisp lettuce

Thoroughly blend mayonnaise, mustard, and peanut butter; add to vegetables, except lettuce, and toss lightly until well mixed. Chill before serving. Arrange lightly in heaps on lettuce. 5 servings. The Modern Family Cookbook
