Grapefruit, Avocado and Cream Cheese Salad

I hear avocado is the “hot new thing” for first foods for babies. I don’t get it, but I do love avocados. Fortunately, most of my kids agree with me that avocado is yummy, even though it wasn’t their first food (or one of their first dozen or two foods).

I especially enjoy the pairing of avocado and grapefruit and cream cheese goes with anything. It does add a bit more creaminess to the already creamy avocado or makes up for a slightly less than perfect avocado. Pink grapefruit looks especially pretty in this salad. Remember the French is not the orange stuff at the store!

2 grapefruit
1 avocado
½ cup French Dressing
Crisp lettuce
3-oz package cream cheese
Paprika

Pare whole grapefruit, removing white membrane as well as skin. Cut out the sections, using a very sharp knife. Peel avocado, remove seed and slice ½-inch thick. Marinate both fruits in French Dressing. Chill thoroughly. Just before serving, arrange drained fruits on lettuce leaves, with a ball of cream cheese in the center of each plate, then add a dash of paprika to the cream cheese. 5 servings.

Note: Cream cheese may be omitted or cottage cheese substituted.  The Modern Family Cookbook
