Orange Cocoanut Salad

Simple, easy, and with the not orange retro French Dressing. If you use the onions, I bet it won’t even look vintage but instead look very hot, modern, expensive restaurant. In any case, it isn’t your mom’s ambrosia.

3 oranges, pared and sliced
Crisp lettuce
½ cup moist cocoanut
French Dressing

Arrange orange slices to overlap on a bed of lettuce. Put a fluff of cocoanut in center. Serve with French Dressing. 5 servings.

Variation: A little grated or very thinly sliced onion combined with the orange is a daring but pleasing addition, and a few slivers of green pepper, a pretty garnish. The Modern Family Cookbook
