Codfish Balls

Fish on Friday time is here. I am not a fish person or a Fish on Friday person. (though I confess that this time of year brings a craving for Filet o’Fish from McDonalds) But here is a lovely recipe for Codfish Balls, more affectionately known in some parts of the country as coddies. Got to love a recipe that includes the words frazzled balls!

Codfish Balls or Cakes

1/2 lb. salt codfish
4 medium boiling potatoes
1 tablespoon butter
3 tablespoons milk
2 eggs, well beaten

Freshen codfish, then drain and separate into shreds. Peel and quarter potatoes and put into a 3-qt saucepan. Add fish, barely cover with boiling water. Cover and simmer until potatoes are tender, about 20 minutes. Drain thoroughly in a sieve or colander. Mash potatoes and codfish together, add butter and milk and whip vigorously until smooth and fluffy. Add well-beaten eggs and beat well. Shape with spoon into frazzled balls and fry until golden brown in deep fat heated to 375° F. Drain for a few moments on absorbant paper or paper toweling and serve hot. For Codfish Cakes, shape into patties and pan fry in butter or bacon drippings. Serve with tomato sauce if desired. 5 to 6 servings. The Modern Family Cookbook
