Kidney Bean Loaf

Vegetarian choices are not really a new choice. Here is a nice retro loaf recipe that is thrifty and fit for your favorite veggie folk (but not vegans) and even a healthy choice for your entire family.

No. 2 can red kidney beans
1 cup boiled rice
2 eggs, beaten
½ teaspoon salt
½ teaspoon sugar
1 teaspoon grated onion
2 tablespoons melted butter
2 tablespoons chopped parsley, if desired

Drain and mash beans and mix well with other ingredients. Turn into buttered 3-cup loaf pan or casserole, and press down firmly. Bake in a moderate oven (350° F.) 1 to 1½ hours, or until a sharp knife inserted in center comes out clean. Unmold on to a hot plate and serve with Tomato Sauce or Chili Sauce. 5 servings.
