Dried Fruit Whip

Well, I know you enjoyed the prune shake…and this is somewhat similar. Try it. Healthy, sweet way to get some fruit and variety into your retro diet…or sneak it into your retro kid’s diets under the guise of desserts.

Dried Fruit Whip

½ lb. mixed dried fruit
1½ cups water
¾ cup evaporated milk, chilled
½ cup sugar
2 tablespoons lemon juice

Wash the dried fruits (peaches, apricots, prunes and pears) and put in a saucepan with the water. Soak 3 or 4 hours. Bring to boil, then simmer gently, covered, 15 to 20 minutes or until very tender. Put fruit and liquid through sieve. Whip the evaporated milk. Stir sugar and lemon juice into fruit purée, and fold  in the stiffly whipped evaporated milk. Serve chilled, or frozen if desired. 5 servings. The Modern Family Cookbook
