I could have sworn I had posted this recipe earlier. I must have been thinking of the baked apple recipe. Goodness knows, I like apple dumplings. I am not so sure about the dicing of the apples, but it does stretch them and they cook faster (and no coring!). Probably easier for the little ones to tackle as well. I would add a sprinkle of cinnamon or nutmeg to each and might be inclined to use brown sugar instead of white.
5 larger or 7 medium tart cooking apples
â…“ to ½ cup sugar
2 tablespoons butter
Peel, core and coarsely dice apples. Roll pastry out in a rectangle about 12 x 18 inches and â…›-inch thick, and cut into 6-inch squares. Place one-sixth of apples in center of each square, sprinkle with sugar, dot with butter. Moisten edges of pastry, gather up and pinch together, sealing the apple in. Transfer to shallow baking pan and bake in a hot oven (450° F.) for 12 minutes, or until slightly browned; then reduce heat to 325° F. and continue baking 25 minutes longer or until apples are tender.
