Escalloped Potatoes and Ham

Ah, the foods a retro childhood was made of…no fancy pre processed just add x (which truly seems to often be as much work as starting from scratch.), instead a simple winter favorite. It would be my temptation to add a little vintage pizzaz with some crushed breadcrumbs, chips or shredded cheese on top of the casserole. I probably would throw in some pepper and garlic too.
Escalloped Potatoes and Ham
¾ lbs. ham
6 to 8 medium potatoes
1 teaspoon salt, if required
2 cups milk

cut ham in ½-inch cubes. Pare and slice potatoes. Heat milk to boiling, add ham and potatoes, and again heat to boiling–add salt if tenderized ham is used. Turn into a greased baking dish. Bake in a moderately slow oven (325° F.) 30 to 45 minutes or until potatoes are tender. Ham cubes may be pan fried before adding to potatoes. 5 servings. The Modern Family Cookbook

  1. Comfort food for sure!
