Molded Vegetable Salad

Ok, so I spoke of the Jell-o salad mystique in retro food aficionado circles and spoke up for the rights of other retro salads in my canned peach salad post. But, well, this one is the sort of classic recipe that gives gelatin its glory. Canned peas, American cheese, celery, mayo…what more could be wanting in a vintage gelatin salad recipe?

Molded Vegetable Salad No. 2

No. 2 can peas
1 package lemon flavored gelatin
1 teaspoon salt
½ cup sliced celery
1 cup diced American cheese, about â…“ lb.

Drain liquid from peas and add water to make 2 cups liquid. Heat to boiling and pour over gelatin, stirring until dissolved. Add salt and chill until thick and syrupy; then fold in drained peas, celery, and cheese. Turn mixture into oiled mold and chill until firm. When ready to serve, unmold onto plate lined with crisp lettuce and serve with mayonnaise. 5 servings. The Modern Family Cookbook
