Spicy Bread Crumb Griddle Cakes

Now where was this recipe during Bread Crumb week?  A new (or retro) twist on pancakes! I definitely will give this a shot!
1 cup sifted dry bread crumbs
3 tablespoons melted butter
2 tablespoons brown sugar
1 teaspoon cinnamon
2 cups milk
1 cup all-purpose flour
2¼ teaspoons baking powder
½  teaspoon salt
3 eggs, separated

Mix together bread crumbs, butter, sugar and cinnamon and brown slightly in a saucepan over low heat, stirring constantly. Remove from heat. Stir 1 cup of the milk into the mixture and let soak until milk is absorbed. Sift flour, measure, and resift twice with baking powder and salt. Beat egg yolks, add rest of milk, and stir in dry ingrredients. When smooth, stir in crumb mixture. Then lightly fold in the stiffly beaten egg whites. Bake on a lightly greased moderately hot griddle and serve immediately with butter and sugar or syrup. 12 to 15 cakes, (¼ cup batter to a cake)  The Modern Family Cookbook
