Baked Beans with Tomatoes

I have never been a canned baked beans fan except for that one kind with the bacon mix-in thing. I don’t remember the name of the brand. In any case this sound like a very classic, and definitely tasty version of real baked beans. Not your 2 minutes in the microwave either…these take quite a while…so think slow food when you think baked beans.
2½ cups dried navy beans
1 medium onion, sliced
3 oz. salt pork, sliced
No. 2 can tomatoes, sieved
2 cups water
1 teaspoon salt
â…› teaspoon dry mustard
Few grains cayenne
â…“ cup brown sugar, packed, or â…“ cup molasses

Wash beans thoroughly and put them into a 3-qt bowl. Add enough water to come 2 inches above beans and soak overnight. Next morning drain and combine with the next 7 ingredients in a saucepan; bring to boil, reduce heat, cover, and simmer 1 hour or until beans are soft enough to break open. Turn into a buttered casserole or baking dish and add brown sugar or molasses. Pull slices of salt pork to the top and bake, covered in a very slow oven (250° F.) 2 hours. Remove cover and bake another hour. Serve hot, with catchup or chili sauce if desired. 5 servings. The Modern Family Cookbook
