Grapefruit Salad

Ah, the Grapefruit Salad of my youth….so very adult and sophisticated…or not

3 small grapefruit or No.2 can grapefruit sections
Crisp lettuce
1/3 cup French dressing

To use fresh grapefruit, pare like an apple and remove sections whole. Canned sections should be drained; use juice as beverage. Arrange chilled sections in lettuce cups. Serve with French dressing. 5 servings
Variation: A slice of tomato or avocado may be added to each serving of this salad for color and flavor. Watercress or curly endive is a pleasant change from lettuce. The Modern Family Cookbook

    Brings back memories of my grandmother’s strange concoctions: cucumber & lime jello salad; tomato aspic; grapefruit salad as above. They were a family joke. I love, love, love this blog.

    It wasn’t that bad….my mother would make up a concoction of grapefruit, crab, (or shrimp), a slice of avocado, maybe a slice of hardboiled egg. Then the dressing….mayo, bit of catsup, bit of oil, some vinegar, some wooostershire, som dry mustard, a little of this and a little of that. She would serve it in some fancy dishes as a starter!!!! It was very good and still is very familiar!!!
