Stewed Dried Apricots

Sort of like stewed prunes…but not

1/2 lb. dried apricots
3 cups cold water
1/2 to 2/3 cup sugar

Wash the apricots thoroughly. Place in a saucepan, add the water, cover and let soak at least 4 hours or overnight. Put the soaked apricots to cook in the same water, cover and simmer very gently for 15 minutes. Just before removing from the heat, stir in the sugar. Serve warm or cold with or without top milk or cream. 5 servings.  The Modern Family Cookbook

  1. we used to have stewed dried peaches a lot. either with custard, for dessert, or plain as a sidedish with sharp curry dishes. soooo good either way. the apricots i think would be excellent too, especially with the curry.
