Veal Chop Suey

Wow! Another chop suey and so authentic. Substitute some pork instead of the veal. Really not half bad retro ethnic if not really “Chinese” food.

Veal Chop Suey

¼ cup bacon fat
1 lb. veal, cut in narrow strips
1 cup sliced onions
2 cups diced celery
1½ cups boiling water
1 teaspoon salt
1 tablespoon molasses
2 tablespoons soy sauce
2 tablespoons cornstarch, blended with ¼ cup cold water
No. 303 can chop suey vegetables
3 to 4 cups cooked rice

Heat fat in large skillet or Dutch oven. Add veal and cook, stirring occasionally until nicely browned on all sides. Add onion, celery, boiling water and salt, cover and simmer until veal is tender, about 30 minutes. Add remaining ingredients except rice and continue to cook with constant stirring until mixture boils and thickens. Serve with fluffy, hot boiled rice. 5 servings. The Modern Family Cookbook
