Orange Bread

This is a tasty little quick bread, not unlike the Orange Soda Bread Slashfood  so temptingly showed us on Friday, that Cook Almost Anything created. Mine doesn’t have seeds though…or a great picture…

Florida Orange Bread

3 medium juice oranges
½ cup sugar
¼ cup water
1 tablespoon butter
1 cup orange juice
1 egg, well beaten
2½ cups all-purpose flour
2½ teaspoons baking powder
¼ teaspoon soda
½ teaspoon saltGrease a 9×5x3-inch loaf pan. Start oven 10 minutes before baking; set to moderately slow (325° F.). Wad and dry oranges. Pare off thin rind with a sharp knife, cutting around the orange, then cut yellow rind in very thin slivers with scissors. There should be ½ cup. Combine Sugar and water, add rind and stir constantly over heat until sugar dissolves. Boil gently for 5 minutes. Peel and syrup should measure â…” cup. Add buttter and stir until melted. Sift flour, measure and resift 3 times with next 3 ingredients. Combine peel mixture, orange juice and beaten egg; add to dry ingredients all at once and mix just enough to moisten ingredients. Batter should be lumpy. Turn into prepared pan and place in heated oven. Bake 1¼ hours or until loaf tests done. 15 servings. The Modern Family Cookbook
