Buttered Rutabaga

Buttered Rutabaga

I have never cooked rutabaga at all. I am not even sure I have ever eaten it. I don’t even remember the last time I saw them in a store.

2 to 2½ lbs. rutabaga
4 cups boiling water
1 teaspoon salt
2 teaspoons sugar
3 tablespoons butter
1 tablespoon flour
Salt to suit taste
Chopped parsley

Slice rutabaga into ½-inch thick slices, then peel slices and cut into 1-inch wide dice or wedges Put into a 3-qt saucepan with water and salt and boil covered until just tender, 25 to 35 minutes. Drain off  ¾ cup of the cooking water. Melt butter, blend in flour, add cooking water and stir over direct heat until sauce boils. Add sugar. Add salt to suit taste. Now pour sauce over hot rutabaga and reheat. Then turn into vegetable dish and sprinkle finely chopped parsley over top. 5 servings.
