Braised Spareribs

Wipe 3 pounds spareribs with a damp cloth and cut into serving portions. Dip in flour seasoned with 1½ teaspoons salt and 1/8 teaspoon pepper. Then brown in hot bacon drippings. Reduce heat, add water (about 1/4 cup), cover and simmer until tender, about 1 hour. If preferred, place browned spareribs in baking pan, add water, cover and bake in a moderately slow oven (325° F.). 5 servings. The Modern Family Cookbook
