Apple Snow

I have to admit I expected a slushy kind of recipe instead of well…a pudding. Retro snows seem to be egg whitey kinds of things. Without the Custard Sauce and Jelly on top, it seems downright diet-friendly.
4 medium-size tart cooking apples
3 egg whites
¾ cup sugar
1 tablespoon lemon juice
Custard Sauce

Pare, core, and slice apples into saucepan; add ¼ cup cold water, cover tightly, and cook slowly until mushy. Mash and whip until smooth and fluffy; there should be ¾  to 1  cup  stiff sauce. Chill. Beat egg whites until just fluffy, and  gradually beat in the sugar and lemon juice until very stiff and smooth. Fold in the chilled apple sauce until thoroughly blended. Serve chilled with Custard Sauce and a spoonful of red jelly on top. 5 servings. The Modern Family Cookbook
