Carrot Butter Sandwiches

Yum! Mayonnaise! Butter! Carrots! What could it be? Nothing more than another frugal vintage sandwich recipe.

1 medium carrot
1/2 cup soft butter
1/8 teaspoon celery salt
1/4 teaspoon sugar
1 tablespoon mayonnaise

Scrape carrot clean, rinse, then shred; mix to a spreading consistency with the butter, which has been creamed until smooth. Add celery salt, sugar and mayonnaise. With this sandwich spread, the bread for sandwiches need not be buttered. Enough for 5 sandwiches. The Modern Family Cookbook
