Salmon Salad

Not quite as adventuresome as our Banana Salmon Salad Recipe

This salmon salad resembles your basic tuna salad. (With a lot more celery or pickle than I would use…but that is how she gets 5 servings out of a can of fish)
1-lb. can red or pink salmon, chilled
1 cup sliced celery, chilled
1/2 cup mayonnaise
1/2 cup chopped sweet pickle
1 tablespoon lemon juice

Drain salmon, remove skin and bones, then flake fish. Add celery, mayonnaise, pickle and lemon juice and mix together lightly. Heap in lettuce cups on individual salad plates and serve. 5 servings. Diced cucumber may be substituted for the celery, if desired.

To make Salmon and Macaroni salad, add 4 oz of cooked and chilled macaroni to the Salmon Salad, increasing amount of dressing if desired. The Modern Family Cookbook
