Caramel Blanc Mange
Even though Blanc Mange has been around forever, it doesn’t strike me as much as a retro food as a Neopets food. This one is a caramel blanc mange and the caramel making has me worried. My experience with making caramel hasn’t been such a good one. It seems too easy to ruin a pot.
Caramel Blanc Mange
â…“ cup granulated sugar
½ cup hot water
¼ cup corn starch
½ cup granulated sugar
1/8 teaspoon salt
¾ cup cold water
1â…” cup evaporated milk, scalded
1 teaspoon milk
Turn the â…“ cup sugar into a skillet and heat, stirring constantly until sugar melts to an amber-colored liquid. Carefully add the hot water and continue to stir over low heat until the caramel is entirely dissolved. then remove from heat. Mix cornstarch with the ½ cup sugar and salt in top of double boiler; add cold water and blend until smooth, then stir in the caramel syrup. Cook over direct heat, stirring constantly, until the mixture boils and thickens. Slowly stir in scalded milk; then place over boiling water, cover and cook 20 minutes, stirring occasionally. Remove from heat and stir in vanilla. Chill well and serve plain or with Chocolate Sauce or cream. 5 servings. From the Modern Family Cookbook.

O! Blanc Mange is very retro! In fact it has been made for centuries. The original Blanc Mange was made by blanching almonds and turning them into milk. It was orig set with real gelatin, derived from boiling bones. Later it was in fashion to use suet.

Suet is always an interesting ingredient in recipes. You can actually pick it up labelled as such at some grocers around here. The blanching and making almond milk explains a lot about the name and the fact that it has almond extract in it fairly often. (though I don’t think either of the ones I have posted have had almond extract in them.)
The evil blancmange is indeed a Neopets gourmet food.
