Fresh Peach Cobbler

Well, more almond extract (gag) and no cinnamon in this recipe. I don’t understand! Was almond extract new and hip in the 40s? I say follow the directions for peeling the peaches and replace the almond with cinnamon.

Fresh Peach Cobbler

Plain pastry for single crust
3 lbs. peaches, (4 cups sliced)
¾ cup sugar
1/8 teaspoon almond extract
2 tablespoons butter

Roll out pastry and trim to fit top of baking dish, then gash in any desired design. Pare peaches or dip into boiling water for about a minute, then remove skins. Cut in half, discard seeds, then cut halves into 4 slices. Place in a 6-cup baking dish or casserole and sprinkle with sugar and almond extract. Dot with butter and cover with the pastry. Bake in a hot oven (450° F.) 20 to 25 minutes. Remove to cake rack to cool. Serve warm or cold. 5 servings. Modern Family Cookbook
