Roast Fresh Boston Style Pork Butt

You have to love the name. I always have, though I have never been a Boston Butt fan. This is a nice addition to your arsenal though if your family does like Boston Butts, just because you can serve it cold the next day! Beat the heat!
Wipe a 4-to 5-pound fresh pork butt with a damp cloth. Sprinkle meat with salt and place on a rack in an open roasting pan with the fat side up. Roast in a moderate oven (350° F.) until done, or about 3 hours. Allow 40 to 45 minutes to the pound. If meat thermometer is used it should register 185° F. when meat is done. Serves 5 people for 2 meals.
