Parsley Butter

This recipe is interesting for a number of reasons. First, you have the pre-food processor management of parsley chopping. Then you have the fact that you can add mayonnaise to the butter to make it more spreadable. Then, there is the whole idea of serving this as a SANDWICH for lunch. “Hey kids, the parsley butter sandwiches are ready!” Then imagining some rough and tumble man of the 40s sitting down for such a lunch. This seems a ladies who lunch type of dish on dainty little cutout bread slices or a spread to cook with or offer for buttering the rolls at dinner. Have you ever had a parsley butter sandwich for lunch? Would you consider such a thing? I think I would add some garlic at the very least.

Parsley Butter

Wash parsley, drain well, then strip leaves from stems and put leaves into a small glass and snip up fine in the glass with kitchen shears. Combine 3 tablespoonfuls chopped parsley with ½ cup of creamed butter. Add salt to suit taste, and blend in a little mayonnaise if needed to give a spreading consistency. Enough for 5 sandwiches.     Yeah, it does sound like something that would be served at a ladies’ tea, along with the cucumber sandwiches.

    Exactly. Cucumber sandwiches and parsley butter sandwiches, served with a nice spot of tea.
