Creole Wax Beans

From The Modern Family Cookbook 

2 tablespoons butter
1 medium onion, chopped
1 branch celery, chopped
1 small carrot, grated
10½-oz can tomatoes, or 1â…“ cups fresh-cooked or home-canned
No. 2 can wax beans
Salt and pepper to taste

Melt butter in a 3-qt. saucepan. Add onion, celery and carrot. Stirring frequently,cook slowly about 5 minutes or until vegetables are softened. Now add tomatoes and cook rapidly for 10 minutes; then add beans, reduce heat, and simmer until the sauce has the consitency of a thin gravy, about 10 minutes longer. Add seasonings and serve. 5 servings.

Giggle at a branch of celery!
