Chilled Cocoa for All

Hot or Chilled Cocoa For All

from The Modern Family Cookbook

3½ tablespoons cocoa
¼ cup sugar
1/8 teaspoon salt
1¼ cups boiling water
5 cups scalded milk or 2½ cups evaporated milk and 2½ cups boiling water
½ teaspoon vanilla

Blend cocoa, sugar and salt in top of a double boiler, then mix to a paste with the 1¼ cups boiling water. Place over direct heat, bring to a boil and cook rapidly for 1 minute, stirring constantly to form a syrup. Add 3 cups scalded fresh milk or 1¾ cups evaporated milk and 1¾ cups boiling water, and heat to scalding over boiling water. Remove from heat, add half the vanilla and whip. Serve the 2 adults from this mixture. Then add remaining liquid, reheat, add rest of vanilla and serve the three children. About 7 servings.

This method makes it possible to serve full-strength cocoa to adults and half-strength to children without making two lots of cocoa.

To make chilled cocoa, place pan of hot cocoa in cold water to cool quickly. Then pour into a sterile jar or bottle, cover tightly and place in coldest spot in refrigerator for at least 2 hours before serving.

My note: Thank goodness! That full-strength cocoa is just bad stuff for kids!
