Filed under: Meat, Recipes, retro food — Retro Food

From The Modern Family Cookbook
5 thick pork shoulder chops (1½ to 2lbs.)
salt
6 good-flavored tart apples
¼ cup water
¼ cup sugar

Wipe chops with a damp cloth. Brown slowly but well on both sides in a hot greased skillet. Sprinkle with salt. Core and slice unpared apples 1 inch thick. Arrange on top of pork chops. Add water, sprinkle lightly with salt and the sugar, cover and place in moderate oven (350° F.) for 45 minutes to 1 hour until chops are tender. Apples may be poached separately, if desired.
